Butter Mint Jubilee


  • 3 oz. package lime gelatin
  • 8 oz. cream cheese, room temperature
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup maraschino cherries, diced
  • 1/4 cup chopped nuts
  • 1 cup miniature marshmallows
  • 1/4 cup Katharine Beecher Butter Mints, crushed


Mix lime gelatin per directions. Add cream cheese. Beat with mixer and chill until semi-soft. Add remaining ingredients, mixing thoroughly. Chill for 3 to 4 hours or overnight.

Serves six.
