Old-Fashioned Butter Mint Sugar Cakes

Ingredients

  • 1/2 lb. butter, soft
  • 1 cup sugar
  • 1 cup crushed Katharine Beecher Butter Mints
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons lemon juice
  • 1 teaspoon vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup sour milk
  • 4 cups flour

Directions

Mix butter, sugar, Butter Mints, eggs, vanilla extract, lemon juice, vinegar, baking soda, and baking powder and beat until creamy. Add milk a little at a time beating until creamy. Add flour a little at a time beating until creamy. Drop mixture by spoonfuls on greased cookie sheet. Bake at 375 degrees for 8 to 10 minutes.

Makes 2 dozen cakes.
