Chocolate Butter Mint Elf Bars

Ingredients

  • 2 oz. chocolate
  • 1/2 cup butter
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup walnuts, chopped fine
  • 3/4 cup flour

Icing

  • 1 1/2 cups confectioners sugar
  • 3 tbsps. butter
  • 2 tbsps. heavy cream
  • 1/4 cup Katharine Beecher Butter Mints, finely chopped

Chocolate Glaze

  • 1 cup chocolate morsels
  • 2 tbsps. butter
  • 1 tsp. vanilla

Directions

Melt chocolate and butter over low heat. Beat eggs and sugar, add remaining ingredients. Bake at 350 degrees for 25 minutes in a greased 9″ x 9″ pan. Beat icing ingredients together and spread over cake. Chill. Combine chocolate glaze ingredients in saucepan. Melt over low heat. Drizzle over icing. Chill until chocolate glaze hardens.

Makes two dozen bars.
