Butter Mint Glazed Lemon Chicken

Ingredients

  • 7 or more pieces of chicken
  • 1 cup crushed Katharine Beecher Butter Mints
  • 1/4 cup lemon juice
  • 1/4 tsp. salt

Directions

Dissolve mints and salt in lemon juice, pour 1/2 of the mixture over the chicken and bake 1/2 hour at 350 degrees. Turn chicken, add remaining sauce. Bake at least 1 hour or until chicken is completely cooked.

Serves five.
